This dinner ticks all the boxes! Healthy ✔️Delicious ✔️ Easy ✔️ Adaptable ✔️ I could go on... but instead I'll just give you the recipe!
INGREDIENTS
Chicken breast (1 per serving)
Oats
Yoghurt
Sweet potato (1 per serving)
Extra virgin olive oil or coconut oil
Himalayan pink Salt
Pepper
Salad of choice (pictured is spinach, lettuce, avocado, red onions, carrot, radish, tomatoes & peppers - but use what you like best!)
METHOD
1. Butterfly the chicken breasts so they’re a little flatter.
2. Roast the oats in oven for 10 minutes whilst regularly turning them.
3. Peel & cut sweet potato into fries, coat with oil of choice, season with salt & pepper and cook in the oven for 40 minutes (or until caramelised)
4. Roll chicken in yoghurt, coat with oats & season with salt & pepper.
5. Cook chicken in oven for 15-20 minutes (depends on size of chicken - until cooked through)
6. Prepare salad
7. Plate up your delicious & nutritious dinner & ENJOY ❤️
