I've got the perfect recipe for you... Start your week by filling your house with the smell of delicious banana bread and have this healthy snack / dessert ready for the week ahead!
You'll love this recipe just as much as I do! Crispy on the outside, gooey on the inside & an all round mouth watering flavour. Plus, it's made with no butter & no sugar, so you can have a homemade healthy bake ready to enjoy whenever you need!
Ingredients:
75 grams melted coconut oil
170 grams of honey
2 eggs
225 grams mashed ripe bananas (I used 3 small-medium bananas which was about the right measurement)
¼ cup milk (I used semi-skimmed)
1 teaspoon baking powder
1 teaspoon vanilla extract
Sprinkle of himalayan pink salt
½ teaspoon ground cinnamon
220 grams plain flour (or wholewheat flour)
optional, I added a small handful of walnuts to the mixture
Method:
Preheat oven 165 degrees Celsius and line a 9×5-inch loaf pan with baking paper.
Beat the oil and honey together with a whisk. Add the eggs and then the mashed bananas, milk & vanilla.
In a separate bowl combine the baking soda, salt, cinnamon and flour.
Fold the dry ingredients into the wet ingredients. If you’re adding any walnuts or other mix-ins, gently fold them in now.
Pour the batter into your loaf pan and bake for 50 minutes.
Let the bread cool in the loaf pan for at least 10 minutes and then carefully transfer the loaf to a wire rack to cool before slicing.
