Macadamia & Vanilla Protein Balls

If you're anything like me and your sweet tooth pops out to say hello mid-afternoon, you NEED this snack! I originally tried this recipe from Sunee App & made a few alterations.


Sweet, salty, gooey, crunchy, plus they look pretty - bonus!


Method


Blend together the following ingredients:

- 1/2 cup dates

- 1/2 cup macadamia nuts

- 1 cup Vanilla Protein Powder (which ever brand you like best. I personally use My Protein but I'm open to new brands if anyone has any suggestions, comment below!)

- 1 tsp Maca powder (you can skip this if you don't have it but it has lots of health benefits so I recommend buying a pack, it last for ages!)

- 2 tbsp Coconut Oil (melted)

- Sprinkle of Cinnamon

- Sprinkle of Pink Salt

- 2 tbsp warm water


Once blended, add another 1/4 cup of chopped macadamia nuts to the mixture. This is what gives them a crunch, I just used a knife to make smaller pieces (blending makes them too small). This mixture should make around 9-10 balls.


Take a tablespoon of the mixture and roll into a ball. Coat in coconut chips (I used around 4 tbsp). Leave to set in the fridge for 2 hours minimum.


And you're done and ready to enjoy.


For those that are interested in calories, these protein balls contain just over 100 calories per ball and each one has 2.5g of protein powder plus any additional protein from the ingredients as an added benefit.


Feel free to adjust the mixture to suit your taste preferences. For example add more protein powder, just make sure you compensate with the wet ingredients so the consistency is the same.
