This weeks challenge is to make or bake something new every day, wether it's a breakfast, dinner, snack or smoothie!
Firstly I tried the 'Simple 7 Protein Balls' from Sarah's Day new @SuneeApp which we delicious! Secondly I took her pesto recipe as inspiration for this Chicken Pesto Pasta dinner!
We all fancied homemade pasta, one of our favourites, tonight so we adapted! Here's what we did...
How To - Homemade Chicken Pesto Pasta
Firstly, take 200g 00 Pasta Flour & 2 Eggs. Mix and kneed together until smooth (usually for around 5 minutes), wrap in clingfilm and place in the fridge for an hour. (You can use regular pasta but homemade is 100 times lighter and tastier).
Chop up your chicken, coat in pesto (homemade pesto is the tastiest, I'd definitely recommend!) and place in the oven for 15 minutes (or until cooked through).
Whilst the chicken is cooking, take your pasta and roll out with a pasta machine (following your machines instructions. We have one that clips onto our mixer and has 9 thickens settings to get the pasta to its final result). Cut into strips to make tagliatelle.
Cook the pasta in boiling water for recommended time. Homemade pasta takes 3-5 minutes.
Once pasta is cooked, drain and stir in the cooked chicken along with some more pesto to coat the pasta.
Plate up and you're done!
Note* You can add vegetables to this however on the day I made this, I had veggie soup for lunch packed with my daily nutrients!
